If you're looking for a perfect and refreshing cocktail to sip on tomorrow this raw mojito will make your mouth tingle! This recipe is taken from one of my fave cookbooks by Sarma Melngailis, Raw Food, Real World. Serves 2 so you'll need to double up for sure!
*1 big handful of fresh mint leaves
*1 cup fresh squeezed lime juice
*1/4 cup agave nectar (Whole Foods has it. It's a natural sweetener)
*1 cup sake
*1 cup ice cubes
*1 cup champagne or sparkling white wine
Prep: Mash the mint in a pitcher with the lime juice and agave nectar. Add the sake and ice. Stir. Top with champagne and serve to your thirsty friends. Yay!! You will need lots of supplies because they will be slurped up with a vengeance.
